From Garden to Oven: Savouring the Elegance of Rose-Infused Cake

The story of rose cakes as an ancient traditional pastry can date back to over 300 yrs. In ancient times, roses symbolised nobility, elegance, and purity, making the use of roses in pastries a representation of these symbolic meanings. It is literally originated in the imperial court of China and became a favoured delicacy among the royal nobility. Over time, the popularity of rose cake extended from the royal court to the common people, becoming a common pastry for celebrating festivals and important occasions.

Yunnan province, referred as 'The southern of Cloud' , renowned for its diverse geographical landscapes, rich ethnic cultures, and vibrant heartbreaking natural scenery, is a aspired peaceful heaven in the southern of China for many tourists. Due to the unique enviable climate with an average annual temperature around 15° and sunshine graces the region for about 270 days each year, Yunnan has not only painted the province with a constant bloom of "four-season flowers" but has also given rise to an exquisite gastronomic wonder that marries beauty and taste seamlessly. Known as the "Land of Fresh Flowers," Yunnan is renowned for its breathtaking flora where you can buy the fresh flowers by weight, inspiring its inhabitants to create the art of crafting delicate flower-infused treats. Among the myriad of floral-inspired delights, there stands a cherished gem in Yunnan's traditional bakery culture – the rose cake. This delectable creation, delicately prepared by infusing premium rose petals, is a testament to the harmonious interplay between floral aroma and culinary expertise. Whenever you visit Yunnan, one of the most important thing is to try the rose cakes! Theoretically, crafting rose cake is required skilled techniques, combining rose petals with flour, sugar, and other ingredients to create delectable treats.

But today I gonna to share my home-made rose cakes, which is easy, healthy and tasty.

Prep Time: 3 hours Difficulty Level: Mediate

Spice Level: Low Cook Within: 20-30 min

Ingredients

  • Edible roses, 150 g

  • Honey, 50 g (personal dependent)

  • Sugar, 20 g (personal dependent)

The amount of honey and sugar can be personally dependent, they are used to soak rose petals to make rose paste. 
  • Butter, 100 g

  • Water 60 g, 80

  • Flour, 250 g

  • Salt, 2 g

Instructions

1. Prepare rose paste

  • Wash the rose petals and dry under room temperature

  • Soak the rose petals into the honey with sugar for 1.5 hours

  • Separate rose paste into pieces and froze them in fridge (optional, for convenience)

2. Prepare oil pastry

  • mix 150 g flour, 60 g, 80 ℃, 2 g salt, 10 g sugar, 50 g butter, knead the dough until it become smooth paste

  • keep and autolyse the dough under room temperature, 20 min

hot water to knead the flour to improves the dough's elasticity, as hot water allows starch in the flour to gelatinise and expand, reducing the dough's hardnessლ(╹◡╹ლ)

3. Prepare shortcrust pastry

  • mix 100 g flour, 50 g butter with small pieces in a bowl

  • knead and rub the mixture until they are combined and can be formed into dough

4. Preheat the oven

  • 170 ℃, turn on the mode of conventional heat

5. Baking

  • divide the oil pastry into equal parts

  • divide the shortcrust pastry into equal parts

  • flatten every oil pastry and encase one shortcrust pastry within the oil pastry

  • roll the dough from middle towards top and and bottom, flat it into an oval shape

  • roll up the oval shape

  • repeat the rolling procedure twice

  • flatten the dough and wrap the filling of the rose paste

  • fold the edge of dough over the filling

  • stamp with model (optional)

  • baking in the oven 20 min in total, flip the pastries halfway through

make sure the softness of oil pastry and shortcrust pastry is similar
