Crispy Perfection Meets Tender Indulgence: Sweet and Sour Pork Magic (táng cù lǐ jǐ,糖醋里脊)

Hi, folks. Today I am gonna to show you one of my most favourite meat dishes: Sweet and Sour Pork. Its historical origin can be traced back to ancient China, however there is no official documentation about its exact origin and timeframe. The only thing every Chinese know is Sweet and Sour Pork is one of the most classic dish in traditional Chinese food cultures, which can be commonly found in the cuisines of Henan, Zhejiang, Shandong, Sichuan, Jiangsu, Canton, and Fujian provinces.

Just as its name suggest, it is Sweet and Sour, but meanwhile crispy and tender.

To be honest, I have been at least two years not to eat pork before I made this recipe. The reasons are simple: the porks in European countries are not daily fresh and instead have gamey odour. After I make this dish, I get back my appetite for pork meat.

Ingredients

  • 250 g Pork Loin

  • 1/2 inch ginger, 2-3 pieces (optional)

  • 1 egg

Sauces

  • ½ teaspoon sugar

  • 1 tbsp soy sauce

  • 2 tbsp cooking oil

  • 1 tbsp corn starch

  • 6 tbsp corn starch

  • 1/4 cup water (two cups)

  • 1/4 tbsp salt

  • 2 tbsp ketchup

  • 1 tbsp vinegar (any kinds)

  • 1/4 tbsp sesame

  • spicy paste (optional)

Instructions

1. Prepare sauce mixtures

  • In a bowl whisk together soy sauce, sugar, salt, a cup of water, vinegar and ketchup

  • in a bowl dissolve the corn start with a cup of water

2. Prepare pork

  • Slice the Pork Loin into slender strips

  • Massage pork strips with egg in a bowl with ginger juice. ~5 min

  • Add the dry cornstarch. Stir to coat the porks until they are irregularly and loosely coated with the dry cornstarch. ~1 min

this step is to ensure the pork strips more crispy after frying ლ(╹◡╹ლ)

3. Cooking

  • Heat the oil in a skillet until you can see the bubbles when you dig a chopstick in the oil

  • Embark on the culinary journey by submerging the delicate pork strips into the bubbling oil, until they transform into a captivating shade of golden perfection. ~6 min

  • Infuse the succulent meat with the exquisite blend of sauces, enhancing its flavour profile to a delightful crescendo. ~2 min

  • Pour the corn starch dissolved in the water into the pan. ~1 min

this step will help thicken the sauce (◕‿◕)
